Thailand's street food culture is its greatest cultural export. The markets are where it lives — crowded, chaotic, fragrant, and utterly delicious. The most significant distinction is between tourist-oriented night markets (designed for visitors, with English menus and higher prices) and local talad (traditional markets where Thais actually shop and eat). Both have their place; the local markets give a more authentic experience, but tourist night markets in destinations like Chiang Mai and Hua Hin are genuinely excellent despite the entertainment element.
The definitive ranking: Bangkok's Or Tor Kor Market (near Chatuchak, BTS Mo Chit) is the city's finest fresh market — an air-conditioned space of extraordinary quality produce and cooked food, where Bangkok's food professionals shop. The street-food scene around Chinatown's Yaowarat Road is a different experience — open-air, chaotic, magnificent — specialising in Chinese-Thai dishes: roast duck, crab fried rice, beef noodle soup, and spectacular seafood. Chiang Mai's Saturday Night Market (Wualai Road) is the best of the northern markets — a walking street of Northern Thai food stalls, handicrafts, and entertainment stretching 600 metres. Sunday Walking Street on Tha Phae Road is larger but slightly more tourist-oriented. In Phuket, the Phuket Weekend Market (Naka Market) near Tesco Lotus is where locals shop and is spectacular. Bangkok's Chatuchak Weekend Market includes an excellent food zone near Gate 1 that is often overlooked in favour of the shopping — the kai yang (grilled chicken), pad thai, and fresh coconut ice cream are exceptional. For floating markets: Amphawa (west of Bangkok, weekend evenings) is the most authentic; Maeklong Railway Market (the train runs through an active food market, vendors pull in their awnings to let it pass) is the most surreal.
