Cultural Origin
Guay teow Sukhothai is a noodle soup specialty of Sukhothai province in the lower north, characterised by a clear pork broth sweetened with palm sugar, topped with pork, green beans, peanuts and crispy pork crackling. The distinctive sweet-salty-crunchy combination distinguishes it from Bangkok-Chinese noodle soups. The dish is now sold nationwide under the 'Sukhothai noodle' label but remains strongly associated with its home province.
